Zucchini and Feta Fritters
Serves: 4 (about 2 fritters per person)
Preparation time: 60 min. (fritters only, make Labneh the day before)
Zucchini Fritters are served in cafés and bars in the Middle East as a quick bite, normally accompanied by either Labneh or a spicy tomato sauce. Instead of Labneh you can also use Greek or European-style thick yoghurt.
Traditionally a part of a Mezze, it's also an excellent sidedish to poultry, lamb or fish.
Ingredients:
Zucchini Friters
- 3 medium zucchinis, about 800 gr. (1 3/4 lbs), coarsely grated
- 1 teasp. salt
- zest of 1 lemon
- 6 scallions, finely sliced
- 5 tabsp. flour
- 2 medium eggs, beaten
- 3 tabsp. flat Italian parsley, finely chopped
- 100 gr. (about 1/2 cup) crumbled feta cheese
- pepper, freshly grated
- olive oil for frying
Use either Labneh or a spicy tomato sauce.
Spicy Tomato Sauce
- 5 tabsp. extra virgin olive oil
- 3 cloves garlic, finely chopped
- 1/2 fresh red chilli, seeded and finely chopped
- 9 medium ripe tomatoes, peeled and chopped coarsely
- salt and pepper to taste
